Chef Jib Chapornpat Dapachutisan, the Head Chef and expert in traditional Thai cuisine, draws upon her culinary foundation from Le Cordon Bleu to reinterpret the charm of authentic Thai flavours in a contemporary light. Her creations, particularly those inspired by Southern Thai dishes, are presented in a sharing menu format, evoking the warmth of a family meal while showcasing meticulous craftsmanship and refined technique. Each dish tells a story of culture and memory, delicately revived for today’s diners.

Highlights include the Beef Cheek Kaeng Rawang with its heady aroma of ancient spices, the beautifully wrapped Traditional Pandan Rice Parcels, the vibrant Pomelo Salad with Grilled River Prawns from Amphawa, and the Roasted Duck Confit in Spicy Red Curry with Lychee and Dried Buddha’s Hand Fruit, where French culinary methods elegantly intertwine with Thai depth of flavour.
