Four Seasons Hotel Hong Kong’s two-Michelin-starred Lung King Heen presents a thoughtfully crafted trilogy of artisanal rice dumplings for the Dragon Boat Festival, led by executive Chinese chef Chan Yan Tak of the two-Michelin-starred Lung King Heen.
The collection begins with the Organic Glutinous Grain Rice Dumpling with Abalone and Conpoy, a celebration of abundance featuring two whole South African abalones, roasted goose, pork, shiitake mushrooms, salted egg yolk, lotus seeds, chestnuts, mung beans and premium sweet ham. In a refined twist, chef Chan replaces traditional glutinous rice with nutritious organic ten-grain rice for added depth and texture.
Next is the Glutinous Rice Dumpling with Peanuts, Pelted Wheat, Lotus Seed Paste & Osmanthus, inspired by classic sweet barley and peanut soup. Its silky lotus seed paste centre flows gently when warmed, complemented by the satisfying bite of peanuts and pelted wheat, finished with fragrant osmanthus honey.
The trilogy concludes with a contemporary expression in the Glutinous Rice Dumpling with Conpoy, Pork Belly, Red Bean & Spicy Termite Mushroom. Earthy Yunnan termite mushrooms meet the sea with prized conpoy and tender pork belly, balanced by high-fibre red beans and a subtle touch of spice, all wrapped in aromatic glutinous rice and bamboo leaves.
For a more complete experience, chef Chan’s dumplings are offered in two curated combination sets paired with “Oriental Red” Chinese tea – a smooth, amber-hued tea with delicate fragrance and natural sweetness that refreshes the palate and aids digestion.

A classic Cantonese-style delicacy designed for sharing, the Man Ho Dried Abalone Glutinous Rice Dumpling is filled with with premium ingredients, including South African dried abalone, conpoy, shiitake mushrooms, tender pork belly, chicken thigh, Hunan lotus seeds, salted egg yolk, green beans and fragrant glutinous rice. Seasoned with additive-free soya sauce and wrapped in bamboo leaves, the parcel is gently perfumed with their subtle earthy aroma.
Equally refined, the Man Ho Red Bean and Pork Glutinous Rice Dumpling masterfully balances sweet and savoury. It features premium Japanese red bean paste, succulent pork belly, buttery salted egg yolk and chewy glutinous rice, all seasoned with soya sauce. Free from alkaline water and made using traditional methods, this dumpling highlights the pure, unadulterated flavours of its finest ingredients.
Completing the trio, the Man Ho Hokkien Glutinous Rice Dumpling pays homage to the classic Fujian-style “bak chang”. Fragrant glutinous rice is stir-fried with dark soya sauce, five-spice powder and shallot oil, then wrapped around a generous filling of mushrooms, chestnuts, minced dried shrimp and juicy pork belly.
