Gaggan at Louis Vuitton is ready to welcome the vibrancy of the new season with a seasonal menu that reflects the spirit of travel—a signature theme of Louis Vuitton. Available from 6 March to 31 May 2026, the new offering features a nine-course lunch and a twelve-course dinner, presenting progressive Asian cuisine in which each dish unfolds like a chapter in a memorable journey.

The menu is overseen by Vix Rathour, who crafts a compelling dialogue between the rugged landscapes of the Pacific Northwest and the refinement of British culinary traditions. By selecting the finest seasonal ingredients—sourced both locally in Thailand and internationally—the chef blends a global perspective with local identity. The result is a dining experience that feels expansive yet intimate, bold yet precise, adventurous yet rooted in craftsmanship—reflecting Louis Vuitton’s enduring commitment to creativity, excellence, and travel.

At the heart of the new seasonal menu lies “World Map”, conceived as a culinary journey across continents. Each dish transports diners to a different destination through flavour, technique, and imagination. The journey begins in the United Kingdom with a reinterpretation of Mock Turtle Tart—a delicate crisp seaweed tart filled with light mushroom mousse, balanced with sour cream and lovage sauce. It then moves to Vietnam with a playful take on Bánh Mì: a freshly baked baguette filled with silky foie gras butter, brightened with capsicum and passion fruit to balance richness with freshness. The journey concludes in Mexico with a golden, crisp Tostada topped with chutoro and vibrant pickles, delivering a bold and layered finish.

The experience concludes with the elegant dessert “Forestier”, which captures the essence of the season in a single plate. Creamy pistachio and coriander seed ice cream is paired with seasonal stone fruits and cherries—served both fresh and confit to create layers of flavour. Thin shavings of black truffle add a touch of luxury, while crisp phyllo pastry brushed with butter and sugar provides a delicate finish—bringing this springtime journey to a refined and memorable close.
