“…PIC at Beau-Rivage Palace, the legendary fine dining destination in Lausanne, Switzerland, has reopened its doors this summer following an extensive renovation. With the creative direction of Chef Anne-Sophie Pic, the most Michelin-starred female chef in the world, the restaurant invites diners on an exquisite culinary journey defined by elegance, precision, and deep-rooted culinary philosophy…”
Beyond its unparalleled flavours, PIC at Beau-Rivage Palace also boasts an exceptional setting: nestled within a luxury hotel by Lake Geneva, the interiors have been entirely redesigned by renowned architect Tristan Auer, who channels Chef Pic’s culinary artistry into every meticulous design detail. The restaurant is flooded with natural light and surrounded by herb gardens and lake views, creating a serene and immersive gastronomic atmosphere.
Chef Anne-Sophie Pic brings to the table her signature culinary philosophy of “Imprégnation,” a concept of infusing complex aromas and layers of flavour into every dish. Together with Chef Jordan Theurillat, a trusted member of the Pic family kitchen for over a decade, they present refined creations such as the delicate Berlingots ASP©, the airy and balanced White Millefeuille, and the smoked lobster and traditionally-caught crab, served with almond-sake sauce, melon, and mint, a dish once prepared for His Majesty King Charles III.
For those short on time but unwilling to compromise on flavour, PIC at Beau-Rivage Palace offers a Michelin-starred three-course lunch menu, served Tuesday to Friday. This lunch experience features a starter, a main course, and a dessert, thoughtfully curated to fit into a 90-minute window without sacrificing culinary excellence.
On the beverage front, Chef Pic collaborates with world-renowned sommelier Paz Levinson and the Lausanne-based wine team to craft both alcoholic and non-alcoholic pairings, complementing each course with bespoke blends that enhance the overall sensory journey. To further honour Swiss terroir, the restaurant will host a seven-course Swiss-themed menu from 26–30 August 2025, featuring the best of local ingredients, alongside the Marché Pic, a pop-up market showcasing regional producers on 29 August.
Adding to the experience, the restaurant has also introduced the Grande Table du Jardin, a communal dining table nestled in the garden beneath a flowing ivory canopy. Seating up to 14 guests, it’s the ideal setting for unforgettable summer evenings or leisurely lunches amidst nature. Whether you’re a seasoned gourmand or a traveller in search of exceptional culinary experiences, PIC at Beau-Rivage Palace is a destination worth adding to your list. It’s where haute cuisine, artful design, and impeccable service converge, a true celebration of flavour and refinement.
