Arva

At Arva, autumn unfolds through contemporary Italian cuisine rooted in the essence of convivial dining, sharing, abundance, and connection at the table. Chef Edoardo Traverso draws upon memories of his childhood in Liguria, Italy, weaving them into an Autumn Menu that champions seasonal ingredients such as chestnuts, pumpkin, mushrooms, and root vegetables. The result is a series of dishes that feel both comforting and sincere, guided by simplicity and respect for produce.

Seasonal highlights include Parmigiana d’Autunno, a silky pumpkin terrine finished with toasted pumpkin seeds and amaretto crumble; Risotto ai Funghi Porcini, Carnaroli rice enriched with porcini mushrooms and Parmigiano cheese; Mosaico di Polpo, tender octopus paired with fennel, orange, and Taggiasca olives; and Ricciola, premium amberjack served alongside celeriac, chanterelle mushrooms, and truffle dashi.

The experience concludes with desserts that echo the softness and nostalgia of autumn, Torta di Castagne, Pere al Vino Rosso, and Millefoglie, each evoking the gentle warmth of seasonal celebration.

The experience is complemented by Aman’s signature teas, from matcha sourced from Aman Kyoto to sencha from Janu Tokyo, each carefully selected to mirror the depth and subtlety of the autumnal rhythm.

As evening descends, 1872 transforms into a refined aperitivo destination in the heart of Bangkok. Guests are invited to unwind with cocktails inspired by ancient tea culture and the botanical richness of Nai Lert Park, crafted by Michele Montauti.
