Café Dior by Mauro Colagreco at Dior Gold House Bangkok introduces a new savoury menu, presenting a refined dialogue between fashion, art, and haute cuisine through the vision of acclaimed chef Mauro Colagreco. The new creations seamlessly weave Dior’s rich heritage with a deep commitment to sustainability, natural cycles, and biodiversity.

Every dish in this new menu is thoughtfully designed to reflect Dior’s distinctive DNA, from roses and haute couture fabrics to the foundations of French gastronomy, translated into edible works of art, defined by meticulous craftsmanship and refined detail.

Highlights from the new savoury selection include La Rose Verte, a poetic interpretation of the rose, pairing madai sea bream with apple, daikon radish, and green tomato, elevated by yuzu gel and Thai kaffir lime oil. Le Croque-en-Fleur reimagines the croissant as a sandwich, filled with perfectly aged raw-milk Comté cheese, ham, and a velvety Mornay béchamel, one of France’s five classic mother sauces.

Another standout is Le Tressage, a tart filled with leek and potato mousse, inspired by Dior’s artisanal craftsmanship and finished with luxurious Oscietra caviar. The experience culminates with L’Organza, a tribute to the airy organza fabric beloved by Monsieur Dior, crafted with delicate vegetable leaves embracing a coarse prawn tartare, enlivened by a vibrant mango aguachile infused with Mexican-style chili.
