This latest redesign features the expertise of Chef Matteo Fontana, a highly experienced Italian chef who has crafted a seasonal Mediterranean menu using fresh ingredients from both local Thai sources and international suppliers. The menu includes enticing starters such as Grilled Octopus Salad (alla Mediterranea), Burrata & Tomato Salad, Pan-Seared Rougie Foie Gras Escalope, and Black Angus Beef Carpaccio.
Following the starters, a wide selection of pasta and risotto dishes awaits, including the signature Homemade Braised Duck Leg Ravioli, crafted from a cherished family recipe with modern techniques, and Handmade Pappardelle with Lamb Ragout, a dish from Northern Italy. There is also an array of freshly baked, authentic Italian pizzas.
Classic main course options feature the Filetto di Manzo “alla Rossini,” an exquisite dish that pairs Wagyu beef tenderloin with foie gras and jelly, or Italian-style pasta served with Pan-Seared Local Seabass Puttanesca, blending local ingredients with traditional Italian flavours. All dishes are inspired by a rich culinary heritage.
In addition to the revamped menu, the dining experience at VIU has also evolved. Guests will enjoy exquisite cuisine in a lively atmosphere filled with upbeat music, reminiscent of Italy, while still maintaining the professional standards of a luxury hotel.
