Their dedication to environmentally conscious practices includes the annual purchase of honey to support local communities and preserve the forests that are vital to their way of life, alongside exquisite craftsmanship evident in the teahouse’s interior decor and furnishings.
The St. Regis Bangkok x Peace和 Oriental Teahouse afternoon tea invites guests to indulge in exceptional premium teas, such as Sencha and Tieguanyin, complemented by an array of exquisite sweet and savoury treats. The experience begins with dried persimmon scones served with fruit jam, cream cheese, and whipped cream, followed by savoury dishes created using the finest ingredients from Peace和 Oriental Teahouse under the guidance of Chef Matteo Fontana. Highlights include a matcha pesto tart adorned with fresh tomatoes and basil for a refreshing contrast to the rich pesto and matcha, a hojicha éclair topped with hojicha mousse, and Parma ham paired with tangy melon. Diners will also enjoy a crab salad with matcha and yuzu jelly, a French-style cup-shaped pastry filled with Gorgonzola cheese mousse and caramelised grapes, and a cone of spiced mango and shrimp with mango gel, delivering a perfect balance of sweetness and spice.
Desserts are crafted by Head Pastry Chef Nandita Panyabaramee, who skillfully merges the finesse of French patisserie with Eastern influences. Just as with the savoury offerings, the sweet treats of this afternoon tea set feature ingredients from Peace和 Oriental Teahouse. These include hojicha dacquoise—an almond-based French pastry filled with hojicha cream, complemented by candied citrus to enhance the tea's flavour—light and airy chocolate sponge cake filled with rich white chocolate ganache and concentrated matcha, and a refreshing milk pudding paired with wild honey pearls from the northern region of Thailand. Additionally, a subtly bitter grapefruit serves to cleanse the palate. Other sweet delights include a French chestnut cake filled with blackcurrants, where the tartness of the fruit beautifully contrasts with the chestnut's sweetness, and a chocolate treat filled with miso caramel and pear brandy, enrobed in almonds, inspired by the Miso Caramel Coffee from 手qraft, another brand under Peace和 Oriental Teahouse.
