Set against the romantic backdrop of a majestic castle nestled within lush gardens in Chonburi, this luxurious dinner event, themed "La Dolce Vita: A Luxurious Italian Food & Wine Dinner," effortlessly set the stage for a night of romance and indulgence. The overall atmosphere was elevated by the captivating performance of a three-piece ensemble, featuring violin, double bass, and saxophone, enhancing the evening with melodious tunes.

The interior of the venue was transformed with taste and flair, showcasing the unique charm of Italy. Tables were adorned in the vibrant hues of the Italian flag—green, white, and red—paired elegantly with Italian-style glasses and wine crates filled with grapes, green leaves, and lemons, all meticulously arranged to create a visual feast.

As this special event intertwined with the theme of a culinary journey, the highlight of the evening was undeniably the meticulously crafted six-course dinner. Each course was a celebration of premium ingredients, thoughtfully paired with hand-selected wines to create the most memorable dining experience imaginable for the guests. Additionally, wine connoisseurs were present to share their expertise and secrets, further enriching the guests’ understanding of the intricacies of food and wine.

The journey began with exquisite Amuse Bouche offerings, featuring three distinct appetisers that tantalised the palate. Starting with Smoked Salmon, Dill Cream, Red Grape, Smoked Oil – The evening commenced with a smoked salmon dish, elegantly paired with a zesty dill cream infused with fragrant herbs, concluding with refreshing red grapes that added a sweet touch.

Following with Scallop, Lemon Mayo – The second offering showcased perfectly poached scallops served alongside a lemon mayonnaise, balancing sweet and tangy flavours, finished with a tantalising lemon aroma that enhanced the complexity of the dish, and Octopus – Concluding the Amuse Bouche, grilled octopus brushed with a signature glaze was served, accompanied by a piquant capsicum puree, awakening the palate and stimulating the appetite.

As the appetisers set the stage, the first course of this unforgettable culinary experience was unveiled: Rosso di Mazara Carpaccio – featuring exquisite Rosso di Mazara prawns from Italy, served as a delicate carpaccio, adorned with lemon gel and grapefruit gel, with a finishing touch of flame for added fragrance and depth of flavour.

Next was the Mangrove Jack – a red snapper subjected to dry-ageing to intensify its rich flavour and grilled to perfection, paired with a creamy, aromatic fish bone sauce and complemented by poached vegetables, adding a level of sophistication to each bite.

Ravioli with Black Chicken, Truffle Sauce, and Winter Truffle Slices followed – this dish featured ravioli stuffed with free-range black chicken from Chiang Mai, enhanced by a rich mushroom infusion, served with a distinctive black truffle sauce and garnished with delicate slices of fresh truffle.

Dry-aged Free-Range Duck was presented next – this duck, having undergone dry-ageing for depth of flavour, was roasted until the skin was perfectly crisp and served with a red wine reduction alongside a refreshing mixed herb salad.

The penultimate course featured Australian Wagyu Striploin – this luxurious cut was grilled to perfection, accompanied by a rich jus and served with grilled baby cos lettuce, adding a delightful crunch that harmonised beautifully with the richness of the meat.

To conclude this sumptuous feast, a Panna Cotta was served – a luxuriously smooth panna cotta drizzled with strawberry sauce and garnished with fresh strawberries, enhanced with fragrant basil juice and crispy meringue, all rounded off with a refreshing elderflower sorbet, perfectly capping off this extraordinary evening.
