The Michelin Dining Series Brings Chef Norbert Niederkofler to Macau

As part of their ongoing Michelin Dining Series, Robert Parker Wine Advocate and the Michelin Guide Hong Kong Macau are bringing two-starred chef Norbert Niederkofler to Aurora, in the Altira Macau for a three-day pop-up. 

The Italian chef’s multiple-course lunch and dinner menus will honour spring with fresh Alpine ingredients from the Dolomite mountain rage, bringing a taste of his restaurant, St. Hubertus, to the city with dishes like Beetroot Gnocci with Beer Soil and Daikon Cream, and Eel & Chamomile.

Celebrated for championing local produce, Niederkofler made a conscious decision with his kitchen to only serve ingredients from the nearby mountain range. The resulting locavorist menu teases out the rich treasures of the region’s volcanic soil, allowing the chef to embrace a wide variety of ingredients throughout the seasons, sometimes using as many as twenty-five different kinds of carrots during a year.  It’s this ‘cook the mountain’ philosophy that first drew the attention of the Michelin guide in 2000, and again in 2007 when he earned his second star. 

Niederkofler’s arrival coincides with Altira Macau’s ‘Sparkling 10’ Chef Series, a month-long culinary celebration to mark the hotel’s 10th anniversary this May, and as always, the menu will be expertly paired with wines chosen by Robert Parker Wine Advocate’s renowned team.
