Geranium’s Three Michelin Star Rating Puts Spotlight on New Nordic Cuisine

Geranium recently became the first restaurant in Denmark to receive a Michelin Guide three-star rating, putting the two-star rating of another Copenhagen restaurant, Noma, in the shade. New Nordic Cuisine, developed since 2004, has kept food connoisseurs spellbound with its natural ingredients and fresh flavours. Geranium’s top chef, Rasmus Kofoed, who was awarded the prestigious Bocuse d’Or in 2011, creates dishes that are light, invigorating and served exquisitely on tableware made of natural materials such as wood and stone. The highlights of the menu include pickled young garlic with sheep’s milk yoghurt and dried mutton, and a salad of Jerusalem artichoke leaves, rye vinegar and walnut oil.
