This November, the Blend Brothers from Zeeland, the Netherlands, visit Hong Kong for a nine-day culinary collaboration at Brasserie on the Eighth with Conrad Hong Kong’s own chef. Aimee Yan lets you know what you can expect from this special dining experience

From November 6 to 14, Conrad Hong Kong will be hosting a special nine-day culinary collaboration at Brasserie on the Eighth with the Blend brothers.

The brothers hail from Zeeland and bring with them an understanding of the understated purity of their homeland’s ingredients. Hendrik, the elder brother, leads the culinary direction. Trained in several Michelin-starred restaurants, he specialises in reinterpreting traditional techniques through a contemporary lens. His younger brother, Kamiel, integrates mixology and music into the dining experience, extending the emotional resonance of each dish through rhythm and aroma.

This collaboration revolves the inspiration from the East, though not in the superficial sense of mixing styles. The menu is built around seasonal and locally sourced ingredients, beginning at the harbour and stretching all the way to the North Sea. The opening course, Dutch Imperial Oysters No.5, captures the clean salinity of both regions’ maritime cultures, paired with pickled jalapeño and Huacatay herbs for subtle yet layered complexity. Following that, amberjack and scallop crudo are complemented by yuzu and jalapeño dressing.

Hendrik’s reinterpretations of Dutch classics are among the most captivating. The Dutch beef croquette is filled with Holstein beef neck. It’s crisp on the outside and tender within, offering a deep, mellow richness. Among the main courses, sea bass and roasted pork belly form a compelling contrast.

Kamiel ensures that cocktails play more than a supporting role in using light acidity and nuanced spices to create rhythm and flow throughout the meal. The restaurant atmosphere has been reimagined for the occasion: music, lighting, and tableware work in harmony, guiding diners’ focus to the evolving flavours.
