#interview: Whisky maker Euan Kennedy on bottling 200 years of The Macallan into a new collection

As The Macallan celebrates its bicentennial, Hill Choi Lee speaks to Euan Kennedy about their Time: Space collection that invites whisky lovers to explore the intricate connection between time, environment and the art of distillation

In the heart of Hong Kong, The Macallan has launched an immersive experience titled Time: Space, celebrating its 200 years of whisky-making excellence. This unique exhibition showcases the brand's storied past and invites visitors to engage with the philosophy that has guided its evolution. Central to this celebration is the Time: Space Mastery, a remarkable whisky that embodies the essence of The Macallan's craftsmanship and innovation.

Euan Kennedy, lead whisky maker at The Macallan, elaborates on the inspiration behind this ambitious project. "The idea we had for our 200th anniversary celebrations was to work with the concept of time travel," he explains. "Connecting the past, present, and future was essential in crafting a narrative that resonates with our heritage while looking forward."

The design of the packaging reflects this theme of continuity through life’s cyclical nature. Crafted as a circular vessel adorned with 200 spikes - each representing a year of The Macallan's history - the design encapsulates the brand's journey while reinforcing its connection to nature. Kennedy articulates this beautifully: "The circular design represents both the circle of life and our ongoing journey from past to future."

Kennedy also emphasised the complexity involved in creating Time: Space Mastery and spoke about the process with great enthusiasm. "Building layers upon layers of flavour was crucial. We wanted to create something that truly reflects our heritage while being accessible to whisky lovers everywhere." This expression is crafted from 14 different cask types, including European oak sherry-seasoned casks and American bourbon casks, resulting in a rich tapestry of flavours.

"The easy part of this project was getting started," Kennedy admits, reflecting on his journey throughout the entire process, which took some time to bring together. He also explains that for a heritage brand like The Macallan and its whiskies that constantly evolve the involvement can go on forever. "The hard part was having the confidence to say we're done. You feel that weight of responsibility, that sense of history." He adds, "For me, it’s really about setting this whisky as not just a representation of the past but also as a benchmark for the future."

In addition to celebrating its legacy, The Macallan is also keen on enhancing consumer appreciation for whisky craftsmanship through experiences like exclusive tastings at its pop-up exhibition in Pacific Place. Here, guests can delve deeper into the artistry behind each bottle, gaining insights into how nature influences every stage of whisky production.

Kennedy believes that such experiences are vital for consumer understanding: "What we tried to do at The Macallan is really bring this mindset of incomparable craftsmanship and creativity. We hope people can appreciate that in the whisky." He notes that feedback from attendees has been overwhelmingly positive: "People have been really appreciative of the time and effort that has gone into this project."

Alongside this monumental launch, The Macallan continues its collaboration with renowned chefs, the Roca brothers, through their documentary series Distil Your World. This series explores various global cities, capturing their essence and translating these experiences into culinary and whisky creations. In their latest episode set in Hong Kong, viewers are taken on a journey that intertwines local flavours with The Macallan’s rich heritage.

“Working with the Roca brothers allows us to explore cultural connections through food and whisky. It’s about understanding how different places influence our craft,” He says of the series and further describes their exploration in Hong Kong as enlightening. “We wanted to capture not just the whisky scene but also the heart of Hong Kong itself.”

The documentary highlights their interactions with local artisans and creatives, showcasing how these experiences inspire unique expressions of whisky. “We met incredible people like Marissa Yu, an architect who guided us through her vision of Hong Kong,” says Kennedy. “Her insights into the city’s architecture and culture enriched our understanding.”

Kennedy also shares his excitement about meeting local artists during their journey. “Engaging with individuals who embody Hong Kong’s spirit was crucial. We spoke with illustrators and furniture makers who reflect the city’s vibrant character.” He believes that these connections help create a more profound appreciation for both whisky and its cultural context.

As The Macallan marks this significant milestone, it invites all enthusiasts - seasoned connoisseurs and curious newcomers - to join in celebrating its legacy. With each sip of Time: Space Mastery, we are encouraged to reflect on our own journeys while appreciating the intricate tapestry woven over two centuries.

As Kennedy aptly puts it, “Whisky has an incredible ability to evoke memories of the past.” Indeed, each bottle tells a story - a moment captured in time - waiting to be shared among friends and family during festive gatherings or quiet reflections.
