This week, two-Michelin-star chef Philippe Léveillé is back in town, cooking in Central’s Italian-French restaurant L’altro. The exclusive summer menu titled “La Mia Cucina d’Estate”- which means “My Summer Kitchen” focuses on fresh seafood. Léveillé is best at amalgamating French culinary techniques with traditional Italian fare, making his dishes true rarities even to the gastronomy experts.
“#wanttobeatomato is an expression of 100 per cent being made in Italy. The mozzarella, the tartare, the tomato all represent Italian culture” says Léveillé. When asked for his favorite ingredients, in true Italian-French fashion, he responds “I have no favourite ingredient, all ingredients can be good if they are high quality”.
